Zucchini Cake

  • 2 zucchini, grated 
  • 150 g pitted dates, roughly chopped 
  • 100 g walnuts, roughly chopped 
  • 80 g hazelnuts, roughly chopped 
  • 375 g self-raising flour
  • 3 eggs, whisked 
  • 200 ml sunflower oil 
  • 50 g caster sugar 
  • Unsalted butter 

Preheat oven to 180 degrees.

Beat together the flour, eggs and sugar. Add the zucchini and mix to combine. Tumble in the dates, hazelnuts and stir to combine, then pour into a cake tin greased with butter, cover with walnuts and cook for 40 - 50 mins.
