Tuna Rice Paper Rolls

  • 200 g tinned tuna 
  • 6 cherry tomatoes, finely chopped
  • 100 g mozzarella cheese, grated 
  • 12 rice paper rolls 
  • 1 tbsp tomato ketchup
  • 3 eggs
  • 4 tbsp mayonnaise

Boil the eggs until slightly firm, then grate. In a bowl, mix together all the ingredients, then soak the rice paper rolls in luke warm water and pat dry with a clean tea towel. Fill with the tuna mixture, tuck in the edges, roll up and repeat.
