Spanish Mackerel and Mandarin Tajine

4 Spanish mackerel fillets

2 mandarin

50 g unsalted butter

½ red onion, finely chopped

1 stick celery, finely chopped

2 strips bacon, roughly chopped

300 g risoni

Salt and pepper

500 ml water

Extra virgin olive oil


In a tajine or deep pot add the butter, a splash of oil, then fry off the bacon, onion and garlic. Sprinkle the fish with salt and pepper, thyme, then place them in the pot. Turn the fish once to brown on both sides, add the risoni, mandarin and pour in enough water to cover.

Cover and simmer for 10 mins.
