Scotch Eggs

  • 11 eggs
  • 1 kg sausage mince
  • 1 red onion, finely chopped
  • 1 clove garlic, crushed
  • 1 tsp smoked paprika 
  • Vegetable oil 
  • Plain flour
  • Breadcrumbs
  • Salt and pepper

Boil 8 eggs until soft. In a food processor, blitz together the onion and garlic until smooth, then mix together with the sausage mince, 1 egg, smoked paprika, a sprinkle of salt and pepper and enough breadcrumbs to bring the ingredients together. Wet your hands, take a handful of mince, place and egg on top and firmly coat the egg in the mince. Whisk 2 eggs to make an egg wash, then coat the balls in flour, egg wash, breadcrumbs and deep fry for 8 - 10 mins.
