Sausage Quiche

  • 8 thin beef sausages
  • 4 spring onions, finely chopped 
  • 2 tbsp semi-dried tomatoes, roughly chopped 
  • 1 cup tasty cheese
  • 6 eggs, whisked
  • 200 ml thickened cream 
  • 1 sheet shortcrust pastry

Preheat oven to 185°C.

In a pan with a good splash of oil, cook the sausages. Slide in the spring onions and cook until slightly coloured, then remove the ingredients from the pan and set aside. Thoroughly mix together the eggs and cream. Tumble in the tomatoes, cheese and stir to combine. Add the sausages and stir again.

Line a quiche tin with the shortcrust pastry, pour in the egg mixture and cook for 30 mins.
