Salsa Verde Fetta Rolled Omelette

4 eggs
100g fetta
4 tbsp coriander leaves
4 tbsp parsley
4 tbsp basil
4 tbsp tarragon leaves
3 tbsp extra virgin olive oil
salt and pepper


Finely chop the herbs and place into a bowl with the olive oil, salt and pepper and fetta and mix until well combined.
Crack your eggs into a bowl and mix well. Heat a fry pan or flat grill (I used the flat grill on my BBQ,) and add a splash of olive oil then pour the egg mix over the surface of your pan, once it has started to dry out place the fetta verde into the middle and roll the omlette over until a nice roll is achieved and serve immediately.
