Sage Entwined Fetta Filled Kofta

Ingredients

 
500g minced lamb
6 spring onions, finely chopped
2 cloves of garlic, finely chopped
4 sprigs of tender fresh thyme, finely chopped
200g fetta
1 bunch large fresh sage leaves
Salt and pepper
½ an iceberg lettuce, shredded
 

Method

 
In a large bowl mix together the lamb, onions, garlic and chopped thyme, salt and pepper then massage well until fully combined.
 
Take a handful of lamb mixture and shape into a “kofta” shape then stuff with about 1 tbsp of fetta, cover with more lamb mix and shape until the lamb fully encloses the fetta.
 
Press a large leaf of sage around the outside of the kofta and press into place.
 
Pour a splash of olive oil onto a hot flat grill and cook the kofta’s for 5-8 minutes on each side.
 
Serve on shredded iceberg lettuce.
