Ingredients
4 small chicken thigh fillets, sliced horizontally
8 slices prosciutto
100 g Australian fetta, cut into 4 chunks
4 jarred roasted red capsicum pieces
Pepper
Method
Preheat oven to 220°C.
In a slice of prosciutto, wrap a piece of capsicum, a cube of fetta and a slice of chicken thigh. Drizzle with oil, sprinkle with pepper and pop in the oven for 15 – 20 mins.
Slice in half and serve.
