Ponzu Pork

  • 500ml orange juice with pulp
  • 100ml soy sauce
  • Pinch ground ginger
  • Splash of fish sauce
  • Splash of sesame oil
  • 3 limes
  • 1 piece of pork belly
  • Olive Oil
  • Watercress
  • Cucumber

Pre heat oven 220ºC

Add to a baking dish orange juice, soy sauce, ginger, fish sauce and sesame oil 

Cut limes into quarters and place in bottom of baking dish

Place pork on top of limes, cover with foil and put in oven for 45 minutes

When pork is cook place upsidedown in dish to soak while heating a wok

Heat oil in wok

Chop pork into chunks and deep fry until crispy.

Remove oil from wok and add a few spoonfuls of sauce from dish until ponzu pork is coated.

Serve on top of watercress and cucumber salad
