New New York Beef

  • 400 g new york cut sirloin steak 
  • 4 slices smoked bacon, roughly chopped 
  • 3 slices regular bacon
  • 2 cloves garlic, roughly chopped 
  • 2 tbsp parsley leaves, finely chopped 
  • 1 lemon 
  • 120 g unsalted butter, cubed 
  • 1 tsp mixed spice
  • 1 1/2 tsp smoked paprika
  • Sea salt flakes
  • Extra virgin olive oil 

Preheat oven to 200°C.

Into a pan with a generous amount of oil, fry the smoked bacon and garlic until crispy. Set aside to cool. In a bowl, mix together the butter, parsley, a squeeze of lemon juice and a pinch of salt. 

In another bowl, mix together the spices and a generous pinch of salt. Rub over the steak. Seal the steak fat-side down first, then the remaining sides. Wrap the steak in regular bacon and pop into an oven dish with a good splash of oil and cook for 12 - 15 mins.

Mix the fried bacon and garlic through the butter, then spoon onto a sheet of baking paper on top of alfoil, roll into a sausage shape and pop in the freezer for 15 mins. Slice the steak and serve with a good knob of butter and drizzle of lemon.
