Liver and Onions

  • 1 calf liver, thinly sliced 
  • 5 spring onions, roughly sliced
  • 2 handfuls bean sprouts
  • 1 bunch broccolini, stalks peeled, roughly chopped
  • 8 baby corn, sliced lengthways 
  • 2 red chilli, roughly chopped 
  • 1/3 fresh pineapple, roughly cubed 
  • Black bean sauce 

Into a wok with a good splash of oil, slide in the pineapple and cook to caramelise. Slide in the corn, spring onions, broccolini, 1/2 the chilli and cook to soften. Remove and set aside. Into the wok with another good splash of oil, cook the liver. Return the cooked vegetables to the pan, a good splash of black bean sauce, a splash of water, the remaining chilli and bean sprouts. Toss to combine and serve.
