Lamb, Minted Pea and Fetta Meatloaf

Ingredients

1 kg lamb mince

½ red onion, finely diced

1 stick celery, finely diced

8 mint leaves, finely chopped

1 egg

50 g fetta, crumbled

250 g frozen peas

Pinch salt and pepper

For topping:

50 g fetta, crumbled

100 g frozen peas

Method

Preheat oven to 230 degrees.

In a bowl, mixed together all the meatloaf ingredients. Place into a baking tin, cover with the topping and pop in the oven for 35 mins.
