Lamb and Macadamia Balls with Pumpkin Gratin

Ingredients

Balls:

1 kg lamb mince
100 g macadamia nuts, unsalted
1 red onion, quartered
1 egg
Salt and pepper
Water

Gratin:

3 white potatoes thinly sliced
¼ butternut pumpkin, thinly sliced
½ cup parmesan cheese, grated
600 ml thickened cream

Method

Preheat oven to 230 degrees.

In a food processor, blitz the nuts, onion and egg, then mix together in a bowl with the mince and a sprinkle of salt and pepper. Mould into balls, then add a splash of water to a baking dish and tumble them in. Cook for 30 mins.

In another baking dish, layer the gratin vegetables, pour over the cream, sprinkle over the parmesan, a sprinkle of salt and pepper, cover with foil and cook for 30 mins.
