Kingfish Ceviche

  • 1 kingfish fillet, skin and bones removed
  • 1/2 red onion, finely diced 
  • 2 limes 
  • 1/4 cucumber, finely diced
  • 1/4 fresh pineapple, finely diced 
  • Extra virgin olive oil 

Into a bowl, add the onion, cucumber, pineapple, juice of 1 1/2 limes, a splash of oil, a sprinkle of salt and stir to combine. Place spoonfuls of the mixture onto a platter, thinly slice the fish and lay on top of the mixture with a drizzle of the remaining lime juice.
