Honey Lemon Chicken

2 chicken breasts, sliced in strips

300 ml chicken stock

5 tbsp honey

1 tsp fresh ginger, grated

1 ½ lemon

2 cloves garlic, grated

5 tbsp cornflour

½ tsp sesame oil

1 ½ cups soda water


Vegetable oil


Into a pan, pour in the honey and stock. Add ½ tsp ginger, zest and juice of 1 lemon, 1 clove garlic and bring to a gentle boil until thick.

In a bowl, mix together the cornflour, soda water, remaining ginger, garlic and lemon juice, sesame oil and a pinch of salt. Toss through the chicken, then shallow-fry until golden.

Pour over the sauce and serve with rice if desired.
