Hawaiian Schnitzel

  • 2 pork loin medallion chops, butterflied and fat removed 
  • 2 fresh pineapple rings, cut 1 cm thick 
  • 2 sweet potato slices, cut 1 cm thick 
  • 1/2 lemon
  • 4 sprigs thyme leaves 
  • Plain breadcrumbs
  • Panko breadcrumbs
  • 2 eggs, whisked 
  • Plain flour 
  • Salt and pepper 
  • Sunflower oil 
  • Extra virgin olive oil 

With a good splash of olive oil, chargrill the pineapple and sweet potato until soft. Mix some panko breadcrumbs with plain breadcrumbs, a sprinkle of salt, pepper and the thyme leaves. Coat the pork in flour, egg wash and the mixed breadcrumbs. Fry the pork in sunflower oil until golden. Serve with a slice of pineapple, sweet potato and a squeeze of lemon juice.
