Grilled Swordfish Steak with Cheesy Watermelon Salad

Ingredients

1 swordfish steak

½ red onion, roughly diced

¼ bunch coriander, roughly chopped

4 baby truss tomatoes, roughly chopped

½ watermelon, diced

100 g cheddar cheese, crumbled

Salt and pepper

1 tsp sushi vinegar

Extra virgin olive oil

Method 

Drizzle the fish with oil, season with salt and pepper and slide onto a grill. Grill on both sides until cooked through.

In a bowl, mix together all the remaining ingredients with a splash of oil, arrange onto a platter and place the fish on top.
