Grapefruit and Shrimp Cocktail with Shrimp Sauce

  • 1 dozen shrimp, peeled and veined
  • 2 grapefruits
  • 1 spanish onion
  • Juice of 1 lime
  • 4 pieces of prosciutto
  • Spinach/Rocket

Place prosciutto on to baking paper on a tray and place in oven until crispy

Slice half the onion and place in a bowl, cover with the lime juice and a dash of salt and pepper, massage through and let sit for at least 10 minutes.

Cut grapefruit in half and level off bottom so it will sit, remove flesh and chop and put in to onion mixture and mix through

In each grapefruit boat add some greenery, onion mix, prawns and top with sauce and crispy prosciutto

Shrimp Sauce

  • 4 -5 tablespoons of whole egg mayonnaise
  • 2 tablespoons of tomato ketchup

Whisk until smooth and creamy
