Flourless Orange Cake

  • 4 oranges
  • 3 eggs
  • 200g caster sugar
  • 1 cup caster sugar
  • 1 cup water
  • 150g semolina
  • 150g almond meal
  • 4 teaspoons vanilla extract

Preheat oven to 180ºC

Chop 2 orange into pieces and remove pips, add to a saucepan with 1 tablespoon of sugar and 1 teaspoon vanilla extract, bring to boil and then simmer until water is absorbed.

In a frypan, add 1 cup caster sugar, 1 teaspoon of vanilla and 1 cup water, bring to boil to create syrup.

Cut in half and then slice 2 oranges and place them evenly in the syrup to simmer

In a mixer, whip 3 eggs, 2 teaspoons vanilla extract and 200g caster sugar until pale and fluffy.

Once the water is absorbed in the oranges blend it until a smooth paste then lay out on a platter to cool.

Remove oranges from syrup onto a long piece of baking paper to cool. 

Save the syrup

Once the orange pulp is cool add to the smooth egg and sugar mix, add semonlin and almond meal and mix until just combined.

Place in a greased springform cake tin lined with baking paper and bake for 40 – 50 minutes

Allow cake to cool then place candied oranges on top and pour over reheated syrup
