Duck San Choi Bao

2 duck breast

¼ cucumber, finely diced

2 spring onions, finely sliced

¼ bunch coriander leaves and roots, roughly chopped

1 cos lettuce

2 tbsp hoy sin sauce

2 tbsp dark soy sauce

2 tbsp sweet soy sauce

1 tsp sushi vinegar


Extra virgin olive oil


Grill duck skin-side down until crispy, then turn and cook breast-side through. Once cooked, slice thinly.

In a bowl, mix coriander, cucumber, spring onion, vinegar, a sprinkle of salt and toss to combine.

In another bowl, mix all the sauces, vinegar and a splash of oil. Fill the lettuce leaves with all the ingredients, drizzle with sauce and serve.
