Ingredients
300g unsalted butter, at room temperature cut into 3 cm cubes
400g caster sugar
4 eggs
450g self raising flour
300 ml milk
1 tsp vanilla bean extract
Method
Place the butter, sugar and vanilla into your food mixer and whisk until the sugar has dissolved and the mixture is light and fluffy.
Add the eggs to the butter and sugar one at a time while still whisking.
Once all the eggs are incorporated add the milk and flour in alternate batches until a smooth batter is achieved.
Spoon the batter into patty pan line muffin tins and bake at 180oC for 10-15 minutes or until lightly brown and risen
Remove from the oven and allow to cool in the trays before removing and decorating with your choice of garnish.
