Cider Battered fish & Chips

  • 5 small flathead fillets, skin removed 
  • 1 tbsp parsley leaves, finely chopped 
  • 1 lemon
  • 3 red potatoes, thinly sliced
  • 1 cup apple cider (extra if need be)
  • 1 tbsp smoked paprika 
  • Rice flour 
  • Plain flour
  • Sunflower oil 
  • Salt 

In a bowl, mix together a good amount of rice flour, plain flour, parsley, the paprika, a good sprinkle of salt, cider and whisk until smooth. Add more cider if the batter is too thick. Dip the fish and potato in the batter and shallow-fry until crispy and golden. Sprinkle with salt and serve with lemon wedges.
