Christmas Shortbread

Ingredients

 
125g caster sugar
250g unsalted butter
185g plain flour
185g rice flour
 

Method

 
Place the butter and sugar into your food mixer and whisk until creamed together and light and fluffy.
 
Gently mix in both flour’s until just combined then empty onto your bench and lightly knead until a soft dough is formed (do not over knead as the mix will toughen.)
 
Shape by hand until the dough is about 3 cm thick then cut out shapes with a pastry cutter (I used a star shape.)
 
Place onto baking paper lined baking tray and bake at 185oC for 15-20 minutes, allow too cool before trying to move as they are very soft while warm.
