Christmas Pudding

Ingredients

 
3/4 cup self-raising flour
60g fresh breadcrumbs
1/4 cup sugar
1 pinch salt, to taste
1/2 teaspoon mixed spice
1/2 cup sultanas
1/2 cup currants
90g butter
1/2 cup milk
 

Ingredients

 
Add all the dry ingredients, dried fruit and butter into a bowl then mix together well.
 
Add the milk and combine to form a soft dough.
 
Place the mixture into a buttered pudding bowl of about 1 litre capacity then cover with foil.
 
Bring a large saucepan of water to the boil then place a saucer in upside down to keep the pudding bowl off the bottom.
 
Lower the pudding in and leave it to boil for 2 hours adding additional water as it evaporates.
