Chilli Chorizo Mussels

  • 1 kg mussels in shell 
  • 1 chorizo, chopped in chunks 
  • 1 red chilli, roughly chopped 
  • 1/2 red onion, roughly chopped 
  • 5 sprigs thyme 
  • 8 baby vine-ripened tomatoes, roughly chopped
  • 1 clove garlic, crushed 
  • Red wine
  • Extra virgin olive oil 

In a pan with a good splash of oil, cook the chorizo until crispy. Tumble in the onion, chilli, thyme and cook until the onion softens slightly. Add the mussels, pour over the wine, cover and leave to steam until the mussels open. Once opened, scatter in the tomatoes, garlic, toss to combine and serve.
