Chicken, Chorizo and Chive Crumble

1 whole chicken, segmented into 8 portions

1 chorizo sausage, roughly sliced

6 large button mushrooms, roughly sliced

¼ bunch chives, finely chopped

30 g whole almonds

200 g unsalted butter

100 ml white wine

150 g plain flour

Extra virgin olive oil

Salt and pepper


Preheat oven to 210 degrees.

Sprinkle the chicken with a good amount of salt and pepper. In a pan with a good splash of oil, seal the chicken in batches. Once sealed, place into a baking dish. Fry off the chorizo and mushrooms until coloured. Pour the chorizo mixture over the chicken.

In a bowl, mix together the flour, butter and chives with your hands until it forms a crumble. Add a sprinkle of salt, tumble in the almonds and mix to combine. Sprinkle the mixture over the chicken and chorizo, then bake for 20 mins.
