Chicken Caccitore

  • 4 chicken thigh fillets
  • 1 brown onion, roughly chopped
  • 250 g button mushrooms
  • 100 g green beans
  • 2 sticks celery, finely sliced 
  • 5 fresh sage leaves 
  • 800 g tinned crushed tomatoes
  • 250 ml red wine
  • 1 tbsp Massel chicken stock powder 

In a pan with a good splash of oil, slide in the chicken to seal and brown. Tumble in the onion, celery, mushroom and sage leaves. Sprinkle in the stock, pour over the wine and bring to the boil. Pour in the tomatoes, 200 ml water and simmer for 10 mins. Once simmered add the beans, simmer for a further 5 mins and serve.
