Chicken and Pistachio Loaf

  • 700 g chicken mince 
  • 1 1/2 zucchini, thinly sliced lengthways 
  • 2 eggs
  • 2 tbsp pistachios, roughly chopped
  • 1 1/2 tbsp parsley leaves, finely chopped
  • 3 tbsp rice flour 
  • Salt and pepper 

Preeat oven to 180 degrees.

In a bowl, mix together the mince, nuts, eggs, salt and pepper and parsley. Sprinkle in the rice flour and stir to combine. Line a baking tin with the zucchini slices, then fill with the chicken mixture and cook for 30 mins.
