Chicken and Mushroom Meatloaf

1 kg chicken mince

½ red onion, finely chopped

1 clove garlic, crushed

1 stick celery, finely chopped

350 g whole button mushrooms

100 g mixed mushrooms, sliced

4 sprigs thyme leaves

1 egg

Salt and pepper

Extra virgin olive oil


Preheat oven to 210 degrees.

In a pan with a good splash of oil, fry off the button mushrooms until coloured. Add the remaining mushrooms and fry until coloured. Place the button mushrooms onto a sheet of alfoil lined with baking paper.

In a bowl, mix together the chicken, onion, garlic, celery, thyme and salt and pepper. Mould into a loaf, place on top of the button mushrooms and then layer the edges with the mixed mushrooms. Wrap tightly, pop into a baking dish and cook for 50 mins. Serve with fresh rocket if desired.
