Chargrilled Spotted Mackerel

  • 2 mackerel fillets, skin on
  • 4 baby vine-ripened tomatoes, finely diced 
  • 1/2 red onion, finely diced 
  • 1/2 cucumber, finely sliced 
  • 1/4 bunch parsley leaves
  • 1/3 rockmelon, roughly chopped 
  • 1 lime 
  • 2 tbsp smoked paprika 
  • Salt
  • Pepper
  • Extra virgin olive oil 

On a BBQ or in a pan with a good splash of oil, sprinkle the fish with salt, pepper and cook skin-side down first, then the opposite side. 

In a bowl, mix together the rockmelon, tomato, cucumber, onion, parsley, paprika, a sprinkle of salt and pepper, a splash of oil and a good squeeze of lime. Serve with lime wedges.
