Billabong sausages & plum gravy

Ingredients

6 sausages
150g self raising flour
100g plain flour
4 eggs
100-150 ml milk
1tbsp finely chopped lemon thyme
½ tsp chilli paste

Method

Place the flour and eggs into your mixer and mix until they start to combine, then while still mixing pour in enough milk to form a thick batter, add the salt, lemon thyme and chilli paste then turn up to high speed and whisk for 5 minutes (this introduces air into the mix)

Fry the sausages on both sides in an ovenproof fry pan. Pour the batter mix over the top while still hot

Place the fry pan into an oven pre-heated to 250C for 15-20 minutes or until golden brown on top.
