Beef and Ginger Meatloaf

700 g beef mince

Knob fresh ginger, grated

2 cloves garlic, crushed

¼ bunch coriander, roughly chopped

1 green capsicum, finely chopped

1 zucchini, grated

2 cloves garlic, grated

2 spring onions, finely chopped

2 tbsp black bean sauce

2 tbsp sweet soy sauce

2 eggs

1 cup cooked rice

Extra virgin olive oil


Preheat oven to 220 degrees.

In a bowl, mix together the beef, 2/3 green capsicum, all the remaining vegetables and coriander. Pour in the sauces, eggs and massage the ingredients to combine.

Fill a baking tin with the mince and cook for 30 mins. Serve with steamed rice mixed with the remaining capsicum.
