BBQ Chilli Chicken

  • 1 whole chicken
  • 3 spring onion greens, finely chopped
  • ¼ cabbage, finely shredded
  • ½ red onion, finely sliced 
  • ½ carrot, grated
  • 1 ½ tbsp parsley leaves, finely chopped 
  • 2 tbsp chilli jam 
  • 1 tbsp malt vinegar
  • 3 tbsp mayonnaise
  • 1 tbsp Massel chicken stock powder
  • Extra virgin olive oil

In a bowl, mix together the chilli jam, malt vinegar, stock, spring onions and a good splash of oil. Slide the chicken into the chilli jam marinade and coat thoroughly. Cook covered on the bbq for 45 mins.

Into a bowl, mix together the cabbage, onion, carrot, parsley, mayo and a splash of malt vinegar. Serve with the chicken.
