Apple and Pork Platter with Pumpkin Smash

Ingredients

500 g pork fillet, thickly sliced
200 g pumpkin, roughly cubed
4 parsnip, peeled
2 red apples
½ red onion, roughly chopped
50 g unsalted butter
Salt and pepper
Pinch of chilli flakes
Vegetable oil
Extra virgin olive oil

Method

Thinly slice 2 parsnip, then shallow-fry in a deep pan of vegetable oil. Once crispy, remove and set aside. Slice 1 apple into thin rings and deep-fry until crispy. Remove and set aside. Sprinkle both with salt.
Roughly chop the remaining parsnips and apple. In a deep pan with a generous splash of extra virgin olive oil, fry the parsnip, apples and pumpkin. Cook until slightly soft, then add a splash of water and leave to stew. Once reduced, add the butter and mash. Remove and set aside.
Add another generous splash of extra virgin olive oil to the pan. Sprinkle the pork with salt, pepper and chilli flakes. Fry in batches until brown and cooked through.
Layer everything onto a platter and serve.
