Ingredients
12 chicken drumsticks
1 tsp paprika
1 tsp ground oregano
1 tsp ground ginger
¼ tsp ground cinnamon
A pinch of ground nutmeg
2 tsp mixed spice
1 tsp sugar
salt and pepper
4 cloves of garlic
2 sticks of celery.
Flour egg and breadcrumbs (for coating
Method
Mix together all the spices, poach the chicken with the garlic and celery
Remove from the stock and toss in the spices until all coated and allow to cool.
Pass through flour egg and breadcrumb then deep fry until brown and crispy
Corn bread
Ingredients
250g frozen corn
250g self raising flour
2 eggs
150g sour cream
150 ml milk
salt and pepper
Method
Place the corn into your food processor and blend until smooth, pour in all other ingredients and pulse until smooth.
Place a dollop of mixture into a hot crepe pan and cook until bubbles appear on the surface then flip and cook on the second side until crispy and golden brown.
